Domaines Ott* was founded in 1912 by Marcel Ott, an agricultural engineer from Alsace who dreamed of establishing a great wine estate near the Mediterranean. Today, the wineries are owned and managed by Champagne Louis Roederer and produce some of the worlds most prestigious wines, but particularly ros wines, made at distinctively different estates in Bandol and Ctes de Provence appellations. Regarded as the gold standard of ros by The Wall Street Journal, in 2016 Domaines Ott* has released a new cuve, By. Ott.
Vineyards
This very ancient land is characterised by a combination of schists and clays, and by an absence of limestone. Produced from vineyards neighbouring their famous Grand Crus, By. Ottis a blend from the Clos Mireille and Chteau de Selle Estates. Clos Mireillesproximity to the sea and microclimate offer freshness whileChteau de Selle, located on limestone hillsides, gives plenty of fruit and textureto the wine.
Winemaking
Made inChteau de Selles completely new cellar, partof the winery is exclusively dedicated to making By. Ott.The grapes are hand picked, followed by strict and selective sorting on tables and an extremely delicate pressing process of whole bunches with a super short maceration to produce the beautiful light colour. Slow fermentation takes place in thermo-regulated vats.
