2022 See Saw Balance Pinot Noir is 100% organic Pinot Noir embodies the patience and timing required for its perfect balance of fruit flavor, acidity, and oak tannins. Harvested from Annangrove Park and Balmoral vineyard, it undergoes cold soaking before fermentation in open top fermenters, followed by daily hand plunging for gentle extraction. After pressing off skins, it matures for 6 months in a mix of stainless steel tanks and barrels, then blended and bottled. With a ruby red color and aromas of vibrant cherries, red plums, and hints of mushroom, the palate offers bright, crunchy red fruit with fine tannins. Ideal pairings include crispy duck salad, rich cheeses, venison, and game meats. Alcohol content is 13%.
