Fruit for this wine was hand-picked from old vines rooted in the red dirt of the Ebeneezer and Kalimna subregions at the northern end of the Barossa Valley.
WINEMAKING
Our approach here follows the philosophy for handmade winemaking employed across all of our wines. Specifically for this Shiraz: cold-soaking and hand-plunging in open fermenters, and cool-fermentation between 18C and 24C, to preserve fruit flavours and characteristics; wild fermentation and extended maceration, for greater complexity; and maturation in a combination of new and old French oak, before blending via barrel-selection for optimal flavour and texture in accordance with our own house style.
THE WINE
This Shiraz is an intensely flavoured, rich wine, inky black to purple in colour. It displays dark berry fruit flavours, and has the texture and structure that will reward extended cellaring.
