Before the grapes even reach the cellar, Simone Adams has carefully examined the vines in the field, so that the grapes achieve the optimum quality. The leaves on the bunch are cut away so that they get as much sunlight as possible and the bunches are reduced in size so that the remaining grapes get the highest possible quality.
When the must finally reaches the winery, it must develop for 12 months in used oak barrels before Simone Adams is satisfied with the quality of his Sptburgunder.
