Nestled in Californias North Coast, Angels & Cowboys Cabernet Sauvignon thrives amidst diverse soils from volcanic to ancient seabeds. Here, Pacific fog and cool breezes extend the growing season, resulting in perfectly ripened grapes which lend themselves to an exceptionally full and well balanced wine.
Slow and steady fermentation extracts maximum flavour and colour, while extended maturation helps to integrate tannins. Individual lots are kept separate for the first few months before a multi-stage blending process creates a wine with classic Cabernet character. Aged for 24 months in toasty French oak barrels, the wine is pleasantly structured and delightfully textured.
On the nose there are aromas of black currant, laced with floral chamomile and lavender. On the palate, firm tannins frame a medley of plum, boysenberry and black cherry, all complemented by expressive currant notes. The finish is smooth and sleek with well-integrated tannins, hints of mocha and vanilla spice. Pair with grilled meats, hearty stews, or aged cheeses.
