The Punks’ Lust Collides is made from Mataro grown in the single-vineyard, biodynamically farmed Thomas Block, McLaren Vale. This is the same vineyard used to source the Cabernet for Fierce Allure and the winemaking across both wines, [which also follows the biodynamic calendar] share similar specs; indigenous yeast fermentation, 25 days on skins, pressed to tank for a light settle before transferring to oak, for malo and maturation. The wine sits 8 months on primary lees and is racked once and then again prior to bottling – total time in oak is 15 months with just 10% new.
